Young soya beans that are harvested before they have ripened or hardened are known as edamame. The name means 'stem bean' in Japanese, because the beans were often sold while still attached to the stem. You grow them like dwarf French beans. They are best eaten fresh to get the maximum nutritional value, but they can be blanched and frozen. You can cook them young in the pod, shell them like peas, or harvest them dry as soya beans.
